Farm to Table Eating: Acorn Squash

Summer is coming to an end and fall is slowly but surely approaching.

Baywater's fresh fall harvest deserves a spot at your dinner table this season. This means it’s time to introduce a special member of their squash family. This squash has a unique acorn shape hence the name Acorn Squash. The beauty of this vegetable is that every piece has an eye-catching deep shade of green with a splash of yellow, but no one piece looks the same. Slightly sweet and dry in taste, there are so many ways to enjoy our delicious acorn squash. For starters, here is how to prepare and roast this fall-time favorite.


How to Prepare

The first step in preparing your acorn squash to cook is cutting it.

Start by carefully cutting off the stem and then directly down the middle either horizontally or vertically. Once cut in half, remove the seeds and guts of the squash with a spoon. You can also choose to cut the squash into moon slices, fourths, or even cubed bite-sized pieces.

*Tip* Before you toss the seeds, keep in mind that they are completely edible and make the perfect tasty snack.


Dress it Up

Do you prefer savory or sweet? Baywater's acorn squash tastes delicious when prepared either way. Grab your favorite seasonings and an oil of your choice and dress it up. Here are a few oil, butter, and seasoning combinations to season the squash no matter which route you decide to take.


Savory: Olive oil, salt, pepper, garlic powder, onion powder, paprika.

Sweet: Butter, brown sugar, cinnamon, nutmeg, honey.

Sweet and Savory: Butter, salt, pepper, cinnamon, brown sugar.

Spicy: Olive oil, salt, pepper, cayenne pepper, paprika.


If cut into bigger pieces, coat the squash in oil and then sprinkle with your choice of seasonings. If cut into smaller pieces, add them to a mixing bowl along with the seasonings and oil of your choice and toss until completely coated.

Roast it

You’ve cut the squash, removed the seeds and guts, and dressed it to your liking. Now it’s time to roast! Preheat the oven to 400 degrees. On a large baking sheet lined with parchment paper, assemble your squash and place it into the oven once ready. Allow the squash to cook for an hour. Pierce the squash with a fork to check how tender it is. If the fork is able to easily pierce the squash, it is thoroughly cooked. Allow it to cool for 5-10 minutes and enjoy!
